Modern pinsa originates from an ancient tradition: Virgil tells that Aeneas, after his long journey from Greece, was welcomed with elongated flatbreads prepared by the peoples of Lazio. The term pinsa comes from the Latin pinsere, meaning “to stretch.”
Today we honor that tradition with a unique dough, fermented up to 72 hours, giving exceptional lightness and digestibility. We use selected flours: ancient wheat for softness, soy for crispiness, and rice for digestibility, all combined with a tiny amount of Italian EVO oil.
Every pinsa is an experience, prepared with care, passion, and the freshest ingredients.
